Gluten Free and Vegan Lemon Meringue Overnight Oats

Breakfast has been a challenging meal when going gluten free. No more waffles, pop tarts or even Frosted Flakes. But I did find something that is delicious and easy to make in the morning. Overnight Oats.

Even though I need to watch and make sure they are gluten free they are still an easy thing to make. The most important thing is the mason jar and the overnight part of it all.

This recipe is a rich and delicious recipe. It has the taste of lemon without the sour pucker at the the end. If you find it is a little too lemony you can add less lemon or more maple syrup.

What you will need is:

1 cup of gluten free oats

1 tbsp chai seeds

zest of one lemon

juice of one lemon

1 tsp vanilla

2 tbsp of maple syrup

1 1/4 cups of almond milk vanilla flavoured

 

I make everything in my mason jar and then stir it up, less dishes, less mess and more yumminess.

First add your cup of oats.

Then add your chai seeds.

Now, it’s time for the work out. Now you need to get your lemon zest. I used my grater and stopped at the white part of the peel.

After you have taken the zest off now its time to juice the lemon. Making sure to add both to your mason jar.

To take away some of the tartness add your 1 tsp of vanilla.

To add sweetness to your oats add 2 tbsp of maple syrup.

the last step is the liquids, for this you could use normal milk, almond or even soy milk but I used 1 1/4 cups of vanilla flavoured almond milk.

The last steps are to mix them all thoroughly and put it in the fridge overnight.

The next morning you will have a delicious healthy breakfast that will keep you full until lunch.
