Warm breakfast is always a comfort. Whenever its cold and I have a stressful day ahead of me I will always go for the warm breakfast. Maybe its the Canadian in me that constantly wants to be warm. Who knows but its necessity.
Well its been a rough couple of weeks and I needed some comfort. So I went into my pantry and decided I needed pancakes. This is the masterpiece that came out of my pantry.
1 1/2 cups of gf all purpose flour
1/4 tsp xantham gum
3 1/2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1 tsp vanilla
1 1/4 cup of milk
3 tbsp olive oil
First i took a nice big bowl and plopped in the egg.
Next I added some sugar and whisked it in.
Next was the vanilla.
Making sure to whisk everything as I went, next I added the salt, oil and the milk.
After all the wet ingredients were whisked in it was time for the flour, baking powder and xantham gum.
Once everything was mixed in properly I transferred it to one of the measuring cups I was using because It made it easier to pour.
Add some butter to your pan and watch it melt.
Next pour in the batter and wait. Wait until you see the edges starting to cook and bubbles starting to come up to the top all over the batter.
Then it’s time to flip!
Do this until you run out of batter. Then all that is left is to cover them in batter and some maple syrup and enjoy!.
