This recipe was made by accident. It was one of those “What do I have in my fridge?” recipes that has now made its way into normal circulation. The beauty of this recipe is you can take the shrimp and switch it out for chicken breasts or make it vegetarian and just have some veggies. I’ve also added cream and made it more of a pepper Alfredo sauce. Now before I go on to all of the various ways you can use this recipe lets actually get started with it. Just like all the others there is a printable at the bottom with all the information you will need to make it.
2 cups of shrimp
4 tbsp of olive oil
1 tbsp of margarine/butter
1 tsp sesame oil
1 tsp pepper
1 tsp salt
1 tbsp parsley
1 tsp basil
1 tsp – 1 tbsp paprika (depends on your spice level)
2-3 cups of gluten free noodles
1/2 cup of cream (optional)
First for this recipe I get the pan ready. I made sure to add the olive oil, sesame oil, margarine, salt, pepper, parsley, basil and paprika all to the frying pan. Also while doing this make sure to start boiling your water for the noodles.
I turn the heat on at about midway heat and let the margarine or butter start to melt. Once its nice and melty mix everything together.
You are going to cook it for a couple of minutes maybe 5 or 6 until it starts to bubble all over the pan.
Then its time to add in your shrimp. Hopefully by now your noodles are in the boiling water and cooking.
Don’t forget to keep stirring the shrimp so it doesn’t start to burn. When your noodles are finished strain out the excess water. Your shrimps should look like this.
Once your noodles are finished and your shrimp is ready you are going to add your noodles to the frying pan. Make sure your head is turned down to medium low at this point. You are going to mix the noodles in with your shrimps and sauce.
You are going to cook the noodles for another 2 -3 minutes. Then serve.
If you want to add the cream in to make it more of an Alfredo this is where you would add it in. If you add the cream, make sure to stir it while it cooks for the extra couple of minutes.
Which ever way you decide to eat it this dish is delicious, light and super easy to make.
