Gluten Free Blueberry Muffins

These were figured out by sheer luck. My husband wanted blueberry muffins but didn’t want the prepackaged ones that weren’t freshly baked. So, we went looking for ones I could bake for him. I was just going to look like a surgeon with a mask on making them for him. Well we found the package and it had blueberry flavoured chunks in them. That did not sound appetizing. So instead I went searching for a recipe I could convert. If I was making it from scratch I was going to eat them too. Now, here we are with a recipe I made twice in a week because they are so good.

Gluten Free Pepper Shrimp Pasta

This recipe was made by accident. It was one of those “What do I have in my fridge?” recipes that has now made its way into normal circulation. The beauty of this recipe is you can take the shrimp and switch it out for chicken breasts or make it vegetarian and just have some veggies. I’ve also added cream and made it more of a pepper Alfredo sauce. Now before I go on to all of the various ways you can use this recipe lets actually get started with it. Just like all the others there is a printable at the bottom with all the information you will need to make it.

Gluten Free Shrimp Stuffed Mushrooms and Dip

I’ve been stuck in a food rut. I needed something new. Something different. That’s where this came in. It is decadent and delicious and super simple. The only downfall it takes a while to get the prep finished. So I won’t make you wait for the recipe since you will have to wait for the prep work. Just like all the other recipes a printable will be at the bottom of the page. Now, lets get started.

Gluten Free Rib Fajitas

Well Cinco de Mayo was last Friday, and I couldn’t let it pass without having something festive so I made fajitas. I had some left over ribs in my freezer so I got creative. It is a simple recipe that you can modify however you would like. But it was a big hit in my house. So as always the printable of the recipe will be at the bottom of this post. Now lets get started.

Gluten Free Slow Cooker Apple Crisp

Summer is coming and that means summer time desserts and treats. The beauty of apple crisp is you can eat it warm or cold. So it’s perfect for the summer. This recipe is simple and you don’t even have to watch the oven. You can set it and go outside and play and come back in when its finished. Like all the other recipes there will be a printable down at the bottom that is just ingredients and instructions. But lets get on with the recipe shall we.

Gluten Free No Bake Cherry Cheesecake

I have been dreaming about cheesecake for months. With all the videos popping up on social media and people posting their delicious desserts it was just getting worse. So, I finally took the plunge. Here is my recipe for a no bake cherry cheesecake. Just like all of my other recipes there is a printable at the bottom for easy use. This recipe turned out so well it deserves my food dance.

Gluten Free Peanut Butter Cookies

There are going to be a lot more cookie recipes coming. I love cookies. I love that they are versatile and they are easy to transport.

Here is a super simple recipe with just four ingredients. They make rich delicious cookies that make your house smell like a bakery.

Gluten Free Homemade Pancakes

Warm breakfast is always a comfort. Whenever its cold and I have a stressful day ahead of me I will always go for the warm breakfast. Maybe its the Canadian in me that constantly wants to be warm. Who knows but its necessity.

Gluten Free Zucchini Meat Lasagna

Lasagna is a warm cheesy delight that I desperately missed. The problem with gluten free lasagna noodles is they get mushy well it’s just not the same. So instead of fighting with more noodles I decided to create a lasagne that ignored them altogether. This recipe uses zucchini for the noodles.

Gluten Free Pasta Salad

It might not be warm here yet but I’ve been channeling all the warm spring and summer thoughts I can. Including summer foods. I had been craving a nice cold pasta salad lately so I decided to make one. This recipe is super simple and easy to do. It’s also deliciously rich and flavourful.

Gluten Free Chocolate Chip Cookies

Some of my earliest memories are baking with my grandmother. We both had a love of anything sweet. I finally decided to do something I have been fearing and converted one of our recipes to a gluten free one. I needed some comfort and baking and my grandmother are what used to do that. So I brought some of that back.

Gluten Free Pineapple Noodle Stir-fry

Quick healthy dinners can get frustrating sometimes. Especially when your normal go-tos just won’t work anymore.

I’ve learned to use that frustration and put it into new meal creation. This being one of them.
