Warm breakfast is always a comfort. Whenever its cold and I have a stressful day ahead of me I will always go for the warm breakfast. Maybe its the Canadian in me that constantly wants to be warm. Who knows but its necessity.
Nothing is sadder then not being able to have cake on your birthday or cupcakes when you are having a bad week. Well I was having a bad week and needed a pick me up so decided to give this a try.
Lasagna is a warm cheesy delight that I desperately missed. The problem with gluten free lasagna noodles is they get mushy well it’s just not the same. So instead of fighting with more noodles I decided to create a lasagne that ignored them altogether. This recipe uses zucchini for the noodles.
Logically oatmeal should be gluten free. But, in reality not all of it is. Oats and wheat fields are generally grown side by side. This can cause cross contamination issues and well no one wants that.

Some of my earliest memories are baking with my grandmother. We both had a love of anything sweet. I finally decided to do something I have been fearing and converted one of our recipes to a gluten free one. I needed some comfort and baking and my grandmother are what used to do that. So I brought some of that back.
The stress that comes with daily life and then the added stresses of being gluten free can get really harsh some days. Some people go to have a drink to relieve some of that stress. It can also be a way to celebrate or even just a social event. Either way alcohol has become a big part our society.
The problem is alcohol can have gluten hiding within it too, so now, your stress relief can be the very stress you are trying to get away from.
Quick canned meals were a part of most childhoods. Who doesn’t remember Zoodles or canned soup on those winter days. Well this wonderful club we are in doesn’t always like those quick meals.
Quick healthy dinners can get frustrating sometimes. Especially when your normal go-tos just won’t work anymore.
I’ve learned to use that frustration and put it into new meal creation. This being one of them.
No one can resist a nice piping hot pizza. At least that’s what I thought. As my membership to the gluten free club got deeper I started to smell gluten from feet away. Pizza no longer smelt like a paradise with melty cheese. It smelt more like pain and would make my stomach churn. But I wasn’t ready to give up.
This recipe ended in me crying and dancing in my kitchen. I live in Canada and I haven’t had a donut in almost 5 years! I have been craving donuts the whole time. To the point where I have dreams of eating donuts. So I finally decided to face my fears and make my own.
