This recipe was made by accident. It was one of those “What do I have in my fridge?” recipes that has now made its way into normal circulation. The beauty of this recipe is you can take the shrimp and switch it out for chicken breasts or make it vegetarian and just have some veggies. I’ve also added cream and made it more of a pepper Alfredo sauce. Now before I go on to all of the various ways you can use this recipe lets actually get started with it. Well Cinco de Mayo was last Friday, and I couldn’t let it pass without having something festive so I made fajitas. I had some left over ribs in my freezer so I got creative. Lasagna is a warm cheesy delight that I desperately missed. The problem with gluten free lasagna noodles is they get mushy well it’s just not the same. So instead of fighting with more noodles I decided to create a lasagne that ignored them altogether. This recipe uses zucchini for the noodles.
